Maria's Collards Manicotti
Valentine's Day is right around the corner, and this is one of our favorite dinners for that special day. Whether you're dining with a loved one, family, or just treating yourself, this recipe is sure to deliver both nutrition and love!

Ingredients:
- 3 stalks of celery, chopped
- 1/2 onion
- 1 cup Higher Power Raw Foods Raw Sprouted Walnuts
- 1 cup Higher Power Raw Foods Raw Sprouted Sunflower Seeds
- 1 tsp salt
- 1/2 cup water or lemon juice
- 1/2 cup sun-dried tomatoes (soaked and chopped)
- 1/2 cup Kalamata olives
- 1/3 cup basil, finely chopped
- 1/4-1/3 cup parsley, finely chopped
- Collard green leaves or chard
- 1/2 jalapeño (optional)
- Sprouts (optional)
For the Sauce:
- 1 medium-sized pepper
- 1/2 onion
- 1/2 cup lemon juice
- 1 tsp salt
- 1/2 cup cashews
- Sprinkle of paprika
Instructions:

Prepare the Filling:
- In a food processor, mix the chopped celery and onion until finely chopped.
- Add the raw sprouted walnuts and chop until well combined.
- Add the sunflower seeds and continue chopping until you achieve a coarse mixture.
- Add the salt and gradually add water or lemon juice to achieve a smoother consistency.
- Fold in the soaked and chopped sun-dried tomatoes, Kalamata olives, finely chopped basil, and parsley. Mix well.

Prepare the Collard Greens:
- Take the collard green leaves or chard and cut out the thickest part of the spine, keeping the upper leaves intact.
- Score the leaves to help them bend nicely when wrapping.

Assemble the Manicotti:
- Place about 1/2 cup of the filling onto each leaf, leaving an inch from the sides for easy rolling.
- Add optional ingredients like sliced jalapeño or sprouts if desired.
- Fold in the sides of the leaves, then bend the bottom over and roll up, laying the seam side down.

Prepare the Sauce:
- In a blender, combine the medium-sized pepper, 1/2 onion, lemon juice, salt, and cashews. Blend until smooth.
- Pour the sauce over the rolled collard manicotti.

Finishing Touch:
- Sprinkle a bit of paprika on top for an extra burst of flavor.
